C is for cookie




After much practicing and fussing around to make up my own GF flour mix, the cookies from the Babycakes cookbook have finally turned out well. They are delicious - crunchy on the outside, chewy in the centre. They are sugar free, gluten free and vegan. Though you wouldn't know it. AND they contain apple sauce, flaxseeds and coconut oil. All really super good for you foods.

Which in my book means you can eat more of 'em, yes?

  1. I must say I am enjoying reading your blog. I did the Gluten free thing for a couple fo my kids there for a while an understand the mucking around with trying to find a flour substitute. I thought I would forward this onto you as I found I could use it cup for cup in nearly all of my baking/cooking recipes.

    All purpose Gluten Free Flour
    This can be used cup for cup in most baking recipes
    Ingredients:
    3 cups brown rice flour (fine ground)
    1 cup potato starch
    1/2 cup tapioca flour or 1/4 cup corn flour
    1 1/4 teaspoons guar gum or xanthan gum

    Directions:
    Sift ingredients together, combining thoroughly. Use in place of flour in cakes and other baked goods.
    Store in airtight container or ziploc bag in refrigerator.

  6. They look and sound really good Michelle, and healthier which is great. Will you sell these I have a friend who is gluten and dairy intolerent and it is hard making sweets for her, ishould get the babycakes book. Oh did your cloud cutter arrive?
